Today marks a very interesting time on the calendar. As the first day of spring, it is celebrated across all cultures of India. In West Bengal it is celebrated as Poila Boishakh, in Kerala it is celebrated as Vishu, also the Tamil New Year, Vaishakhi for Punjab (a day earlier), Rongali Bihu for Assam, are just a few examples of the Spring-New Year Celebration. 1. Poila Boishakh :
Bengalis celebrate it with many traditional dishes to offer. The plate is filled with curries and fried goods to welcome spring. From Basanti pulao or a sweet rice pulao, as main course, to Kosha Mangsho, a traditional mutton dish, the dishes are many. A favorite vegetarian dish called Aloo Posto is always a part of the meal which ends with Channar Payesh or cottage cheese pudding.
Punjabis savour their Meethe Chawal, or sweet rice dish on this day specially. Wearing yellow to mark prosperity and oncoming of spring, the rice are cooked with much fervour and assorted spices. The sweetness is one that can only be matched with festivities and celebration.
As no celebrations are complete without food, the traditional Kerala Vishu platter is a huge celebration to say the least. The sumptuous lunch of Vishu consists of crackling papadam, tangy sambhar, pachadi, moru and finally the velvety payasam.
